1 or 2 whole branzino, each 1 to 1 1/2 lb., scaled, cleaned and fins removed
Kosher salt (or Pink Himalayan) and freshly ground pepper, to taste
1/2 lemon, thinly sliced
1 1/2 Tbs. olive oil

Directions:

Rinse fish, pat dry, and place on a lightly oiled baking pan.

Brush fish with olive oil, and sprinkle with salt and pepper.
Broil uncovered for 2 mins. Shake pan and broil for 7 mins. on each side. (Skin will blister and fish will flakeeasily with a fork. Remove fish from oven, and transfer to serving plates.

Season each fish cavity with salt and pepper. Place the lemon slices and garlic slices in cavity.
Serve with grilled tomato or fennel and potatoes.
