3 lbs. boneless beef chuck roast
1 TBSP. Oil
1 small onion, thinly sliced
3 garlic cloves, peeled and minced
1 tsp. thyme
2 -10½ ounce cans Campbell's Condensed French Onion soup
8 Slices provolone cheese
8 hoagie rolls

Season the beef with salt and pepper. Heat in the oil in a 12-inch skillet over high heat. Add the beef and cook for 10 minutes or until well browned on all sides. Remove the beef and move to a 6-qt slow cooker. Add the onion, garlic, thyme, and soup to the cooker. Cover and cook on HIGH for 4-5 hours or until the beef is tender.
When the beef is almost done preheat the oven to 350º. Place the rolls, cut-side up onto a baking sheet. Place cheese on each roll and bake for 1 minute or until rolls are toasted.
Remove meat from crock pot and place on cutting board to cool for 10 minutes. Slice thinly and divide among the rolls. Serve with the soup mixture (au jus) for dipping.
