10 lbs. new Potatoes
¾ cup Sugar
¾ cup white Vinegar
¾ cup Water
1 small Onion (pureed)
1 tablespoon white pepper
Salt to taste
¾ cup vegetable Oil
Add Mayonnaise to desired creaminess
Add Carrots (grated) and Parsley -for garnish

Directions:
Steam potatoes and peel while hot (you can scrape off the skin by hand under cold water). Cool in refrigerator for at least one hour.
Mix the next seven ingredients in a bowl, adding oil last.
Slice potatoes into 1/4 inch slices put into large bowl, fold in mixture. Chill overnight.
Add mayo to desired consistency. Place in large dish.
Add garnish of carrots and parsley.
