8 Beef shanks 14 oz. each
1 Bottle of red wine
3 cups of beef stock
2 Bay leaves
1 can of tomato paste
2 Onions rough chop
1 Carrot rough chop
1 Celery rough chop
3 Cloves of garlic
1 Sprig of rosemary
2 tbsp. Salt
2 tbsp. Pepper

PREHEAT OVEN TO 400º
1. Pat the beef shanks dry and season with salt and pepper and dredge with flour.
2. Put the beef shanks in a HOT braising pan and sear each side. When searing the meat, try not to crowd the pan the mea wont sear properly. If needed, braise in batches.
3. Take the meat out of the pan when done searing.
4. Next add your mirepoix. (onions carrots celery and garlic)
5. Once the onion are soft add the tomato paste, cook for one minute.
6.Stir in the red wine, beef stock, rosemary, bay leaves, and return the beef shanks to the braising pan. Place the pan in the oven for 30 minutes or until the internal temperature is 165º, check every 5 minutes after 20 minutes.
