1/2 cup olive oil
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1/2 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
2 cloves garlic chopped
3 tablespoons chopped sweet onion
1/2 cup chopped fresh parsley
1 1/2 cups beer

Directions:
Directions:
Pour olive oil in a 2 cup liquid measure.
Mix together salt (optional), pepper, paprika, cumin, and cayenne and add to olive oil. Add garlic, onions, and parsley. Mix together with a fork. Slowly add beer as it will cause the mixture to foam and bubble slightly. Pour marinade over the chicken in a zip lock bag. Remove as much air from the bag as possible and seal. Turn the bag from side to side to make sure chicken is coated with the marinade. Place on a dish and let sit in the refrigerator for an hour or up to over night. Turn occasionally.
Grill the chicken on the barbecue or under the broiler.

Makes enough for 5 pounds of chicken.
Omit salt for a low salt diet.
Substitute other herbs like thyme or marjoram for parsley.
Can use apple cider or ginger ale instead of beer.
Can use the marinated chicken in a sir fry and use the marinate as the sauce. Be sure to cook the sauce well to eliminate bacteria.
