Drum or Redfish
.Four black drum or redfish filets
.1 tbsp coarse sea salt
.1 tsp. black pepper
.1/2 tsp. cayenne pepper
.1/4 tsp. paprika

Herbed Butter
.2 sticks unsalted butter
.5 sprigs fresh thyme
.5 sprigs fresh oregano
.4 cloves garlic

Drum directions
1. Pat each filet dry
2.Combine all of the seasonings together in a small bowl.
3. Rub the seasoning on both sides of the filets. Heat a heavy skillet over medium high heat.
4. Place one to two filets in the skillet and cook for two minutes on each side.
5. After you turn them, place one teaspoon of herb butter on top and allow it to cook while the fish cooks.
6. Remove from the skillet and keep warm while you repeat the process with the remaining filets.
7. Serve warm

Butter directions
1.Allow the butter to come to room temperature, but not too soft.
2. Strip the leaves from the stems of the herbs.
3.Place the butter, thyme, oregano, and garlic in a food processor.
4. Blend until combined
5. Spoon the butter onto a sheet of plastic wrap. Roll up the butter and store in the refrigerator or freezer
ready to use.
