Crust:

1 1/4 cups graham cracker crumbs
1/4 cup granulated sugar
1 teaspoon vanilla
4 tablespoons (1/2 stick) sweet cream butter, softened

Filling:

3 (8 oz) packages of cream cheese, softened
1 1/2 cups granulated sugar
4 eggs

Topping:

6 (1 oz) squares of semisweet chocolate
1/2 cup sour cream

Preheat oven to 350 degrees

Crust:

1. Combine ingredients in a small mixing bowl, blend well
2. Press or pat the mixture onto the bottom of a well buttered 9 1/2 spring-form pan
3. Chill in the freezer or refrigerator for about 30 minutes

Filling:

1. Beat cream cheese at a low speed with electric mixer until light and fluffy
2. Gradually add the sugar, mixing well
3. Add one egg at a time, beating well after each addition
4. Pour into a prepared pan
5. Bake for one hour
6. Let cool until returned to room temperature

Topping:
1. Place chocolate squares in a saucepan and cook until chocolate melts
2. Cool slightly, stir in sour cream
3. Spread chocolate mixture evenly over the top of the cheesecake

Once cheesecake is assembled, chill thoroughly before serving
