2 eggs
1 diced onion
1 chopped scallion
1 mashed Idaho Potato or 1 lb.
Handful of parsley finely chopped
Handful of dill finely chopped
1 green pepper finely chopped (optional)
Pinch of breadcrumbs (optional)
1 lb. ground beef (optional)
Salt and pepper

Directions:

Place potatoes in a large pot and cover with cold water. Add some salt, and cook until a fork easily goes through them.
Grate onion in a large bowl.
Once your potatoes are done, peel them, and then grate them in the same bowl with the onion. Mix to combine. (This is traditionally done by hand!).
Add salt and pepper.
Crack eggs and add to mixture.
If adding ground beef add it in now and mix with hands.
If mixture is too wet, add breadcrumbs.
Take a small amount of the mixture (about 2 tbsp.) and form a meatball shape. Then pat it flat into a patty and place on a plate. Repeat. Wash hands and heat vegetable oil in a large pan over medium heat.
Once you see that the bottom has turned a golden brown where the edges are a rich brown and crispy, flip them over. Add more oil as necessary.
Place a dish with a paper towel in it next to your work station. When removing the kotlets from the pan, try to drain as much of the oil as possible, then place onto the plate.

Iraqi comfort food that we grew up eating at Nana and Baba's house. Delicious in a pita sandwich with amba (pickled mango) and parsley. Make David's famous chopped amba and diced tomato salad to complement your sandwich!
