Pizza with Cauliflower Crust Recipe

1 small to medium head of cauliflower (yeild: 2 to 3 cups of cauliflower rice)
1/4 tsp kosher salt
1/2 - 1 tsp of dried basil
1/2 -1 tsp of dried oregano (to taste)
1/2 tsp garlic powder
optional - few shakes of crushed red pepper
1/4 cup parmesan or romano grated cheese
1/4 cup formaggio cheese grated (optional)
1/4 cup mozzerella cheese (shredded or small pieces)
1 egg
A few drops of olive oil
Topping:
Pizza Sauce
CHeese, Vegetables, Pepperoni etc to top as you like

Bake Crust:
1. Preheat oven to 500 degrees.
2. Either use a silicone sheet on a pizza pan or baking sheet or place parchment paper on pan and spray with cooking spray. I use the silicone sheet.
3. Wash and dry head of cauliflower. Cut off florets - you don't need much stem.
4. Place florets in food processor and pulse to create cauliflower rice. Optional you can purchase cauliflower rice fresh at Costco and frozen at Trader Joe's .. and probably elsewhere. 3 cups of cauliflower rice is ideal.
5. Microwave cauliflower rice for 4 minutes and allow to cool.
6. Once cool scoop onto cheesecloth or tea towel (I use cheese cloth) and wring and squeeze the cauliflower until moisture/liquid is removed. This is a crucial step - don't skip it or your crust will not hold together.
7. Dump the squeezed out cauliflower rice into a bowl. Add the spices and cheeses and mix. Add the egg and mix together. Sprinkle a few drops of olive oil on the dough and knead.
8. Once mixed together use your hands to transfer to your pizza pan on the parchment paper or silicone, and press into a crust the shape and thickness you desire - just don't make it too thick or too thin.
9, Bake for 10-15 minutes - until it starts to turn golden brown. Keep an eye on it first time as every oven is different.
10. When crust is done - remove from oven . Top with sauce and toppings. Change oven to low broil and return pizza to oven for 7-9 minutes until cheese is bubbly and slightly golden.
11. Remove from oven and let it rest for a few minutes before serving.
