Ingredients:  
• 2 tablespoons olive oil
• ½ yellow onion, sliced into strips
• 3-4 skinless boneless chicken breasts (around 2 pounds/32 oz)
• salt and pepper to taste
• 1 14.5 oz diced tomatoes
• 2 cloves garlic, minced
• ⅓ cup balsamic vinegar
• 1 teaspoon oregano
• 1 teaspoon basil
• ½ teaspoon rosemary
• ½ teaspoon thyme

Directions:
Directions:
1. Place the yellow onion on the bottom of the slow cooker.
2. Salt and pepper both sides of the chicken and place on top of the onion,
3. Add the diced tomatoes (with juice), garlic, balsamic vinegar, oregano, basil, rosemary, and thyme to the slow cooker. Stir to combine.
4. Cook on low for 6 hours or 4 on high, or until done. Enjoy!
