2T olive oil
4-5 cloves garlic, chopped
3 strips bacon, lardons
8 cups water
1 (6oz) can tomato paste
3/4 c dry lentils
Fresh basil, chopped, or 2 tsp dried
Fresh oregano, chopped, or 2 tsp dried
Fresh parsley, chopped, or 1 T dried
3 carrots, sliced
2 celery stalks, sliced
1 sm cabbage wedge, chopped
1 med onion, chopped
1 can chick peas, undrained
1 can red kidney beans, undrained
1 can great northern or navy beans, undrained
1 cup tuition I or elbow macaroni, cooked & drained

Directions:
Cover bottom of large pot with olive oil and sauté garlic and bacon until browned. Add water, tomato paste, lentils, basil, oregano, parsley, and salt. Bring to a boil and simmer about 30-45 min or until lentils are tender. Add vegetables, bring back to boil, and then simmer until tender, about 30 min. Add chick peas, kidney beans, and great northern or navy beans including liquid from cans. Add more water if soup is too thick. Simmer 5 minutes. Stir in cooked pasta. Serve with grated Romano or Parmesan cheese.
