10 lbs Self rising flour
6 lbs light Brown Sugar
4 grated Coconuts
4 lbs Butter
3 tbsp. Vanilla or Mixed Essence
1 tbsp grated Nutmeg
1tbsp Cinnamon
1 dozen Eggs
1 tsp Baking Powder
1 lb Raisins
1 lb Loaf Pans
Directions:
Directions:
In a small bowl combine 1 cup of grated coconut with 1 lb of sugar. Add a teaspoon of essence and set aside. In a large mixing bowl combine all dry ingredients, add butter and eggs, fold and knead dough until its not sticking to your hands. Grease baking pans, fill up pan half full, place a teaspoon of the coconut mixture in the middle cover add some mixture at the top leaving enough space for the mixture to rise. Place in preheated oven at 365 degrees, baked until center is dry and top is golden brown.
