Ingredients: Michelle's Sesame Noodles Ingredients: 1 16oz. package linguini 6 cloves garlic minced 6 tbsp. sugar 6 tbsp. safflower oil 6 tbsp. rice vinegar 6 tbsp. soy sauce 2 tbsp. sesame oil 1-2 tsp. hot Chinese choke sauce or crushed red pepper flakes 6 scallions sliced 1 tsp. sesame seeds toasted Directions: Cook linguine according to package directions; drain and transfer to a large serving bowl. Combine garlic, sugar, oil, vinegar, soy sauce, sesame oil and chili in a saucepan over medium-high heat. Bring mixture to a boil, stirring constantly, until sugar dissolves. Pour over linguine, tossing to coat. Sprinkle with scallions and sesame.
Melissa's Stir-Fry & Fried Rice Stir-Fry: Sauté onion in oil and add chicken/meat/tofu when onions are slightly translucent. Sauté meat/chicken and then add tamari sauce and sauté. Slowly add vegetables in and keep adding the following based on your preference: sesame oil, rice wine vinegar, tamari, honey, garlic salt, a healthier teriyaki sauce (if desired. not necessary.) Fry halved cashews in a separate pan of you want to add some crunch. You can also add some hot sauce such as Trader Joe's Sweet Chile Sauce. Fried Rice: Cook white rice. Add tamari sauce to your liking. In a separate pot, boil frozen peas and carrots. Add to th rice mixture when cooked. Fry an egg or two in a separate pan and add in. Enjoy!

Directions:Lo-Mein: 8 ounces lo mein egg noodles* 1 tablespoon olive oil 2 cloves garlic, minced 2 cups cremini mushrooms, sliced 1 red bell pepper, julienned 1 carrot, julienned 1/2 cup snow peas 3 cups baby spinach (Edamame, broccoli, water chestnuts are other good ideas. Add as little or as many veggies as you like). Sauce: 2 tablespoons reduced sodium soy sauce, or tamari (we use it and enjoy it) 2 teaspoons sugar (we use honey instead) 1 teaspoon sesame oil 1/2 teaspoon ground ginger (or powdered) 1/2 teaspoon hot chile sauce (such as Trader Joe's Sweet Chile Sauce) In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and chile sauce ; set aside. In a large pot of boiling water, cook noodles according to package instructions; drain well. Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes. Stir in egg noodles and soy sauce mixture, and gently toss to combine.Serve immediately. |

Notes: Chinese Chicken Lettuce Wraps a la Melissa (based on recipe from damndelicious.com) 1 tablespoon olive oil 1 pound ground chicken 2 cloves garlic, minced 1 onion, diced 1/4 cup hoisin sauce (or teriyaki) 2 tablespoons soy sauce or Tamari 1 tablespoon rice wine vinegar 1 tablespoon freshly grated ginger 1 (8-ounce) can whole water chestnuts, drained and diced 2 packs of shiitake mushrooms finely sliced (they will shrivel up even more) 2 green onions, thinly sliced kosher salt and black pepper to taste 1 head of butter lettuce Heat olive oil in a saucepan over medium high heat. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes. Stir in chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
