2 pounds ground beef
3 ounce pkg. potato pancake mix
1 teaspoon salt
1 egg
1/4 teaspoon pepper
1 c water
2 eggs
1 tablespoon matzoh meal
3/4 cup matzoh meal
1 can tomato and mushroom sauce

Directions:
Directions:
Combine 3 ounce package potato pancake mix, 1 egg, 1 cup of water, and 1 tablespoon matzoh meal. Mix well and set aside.
Combine meat, salt, pepper, eggs, 3/4 cup matzoh meal and 3/4 cup tomato and mushroom sauce in large mixing bowl.
Place meat between two pieces of wax paper and press out into a 1/2 inch thick rectangle.
Remove top piece of wax paper and spread potato pancake mixture over meat in a thin layer.
Roll firmly in jellyroll fashion using the bottom piece of wax paper to help.
Place in a greased shallow baking pan, and cover with the balance of the tomato and mushroom sauce. (You can also use a greased casserole dish.)
Use a fork to put holes in the meat loaf.
Bake in a moderate oven at 350 degrees for 1 hour.
