1 medium to large cauliflower
1/4 cup sour cream
1/3 block of cream cheese
1 tbs. Kosher Salt

Directions:
Directions:
Steam cauliflower till a knife slides in stem easily. Do not let the cauliflower get too soft. Add sour cream, cream cheese, butter, & salt to taste. Mash, leaving a small amount of texture. Do not whip.

This is a wonderful low carb substitute for mashed potatoes. I also like to serve a meat marinara over the mashed cauliflower. Yum!
