2-1/2 cups flour-divided
1 tbsp sugar
1/4 tsp salt
1/8 tsp baking soda
3 tbsp shortening
1 cup shredded cheddar cheese
1 cup buttermilk
2 tsp melted butter

Directions:
Directions:
Preheat oven to 475. Mix 1-1/2 cups of flour, sugar, salt and baking soda in a large bowl. Cut in shortening until mixture resemble coarse crumbs. Stir in cheese and buttermilk. Let stand 3 min. Place remaining flour in small bowl. Use a lightly oiled scoop and scoop dough into bowl of flour. Toss to lightly coat. Shake off excess. Place in 8 or 9 inch round cake pan that has been sprayed. Pan will be full with balls touching each other. Brush with butter. Bake for 12 -15 min or until golden brown. Let cool for 3 min. Move to wire rack. Separate biscuits and serve.
