5 oz Ricotta cheese
5 oz Sweet Gorgonzola cheese
7 oz Heavy cream
3 oz Parmigiano cheese grated
2 oz Butter
1 Whole garlic clove
optional white or black pepper to taste

1 pound of pasta of your choice (Fusilli, rigatoni, shells, penne, gnocchi)

Note you can substitute Fontina for the Ricotta or another soft cheese

Melt butter with garlic clove over low heat. Do not fry the garlic. Remove garlic after a minute or so.
Add gorgonzola, stir until melted, add ricotta. Lastly add the cream. Do not boil!

Cook pasta of your choice. Drain and mix with sauce add 3/4 of the grated cheese and optional pepper. Serve with remaining grated cheese on top.
