2 Tbsp. butter
1 lg. onion, diced
2-3 ribs celery, diced
2 cups diced ham
32 oz. chicken broth
3 large potatoes, diced (3/4 in)
2 1/2 cups whole milk
12 oz. Velvetta cheese
1/3 cup celery leaves, chopped
Shredded cheddar cheese
Salt and pepper (to taste)

Dumplings:
2 eggs
1 cup flour
pinch of salt and pepper
1. Beat eggs in mixing bowl.
2. Add flour, salt and pepper, mix well.
3. Batter should be stiff but not dry (add additional flour as needed)
4. Use 2 spoons to drop marble sized dumplings into soup (I just pinch off the dough!)

1. Over med. heat melt butter in large pot.
2. Add ham, onion and celery, sweat until onion is translucent (approx. 10 min).
3. Add chicken broth, bring to low boil.
4. Add potatoes, simmer on low until they start to soften.
5. Add milk, bring to low boil.
6. Gradually add diced Velvetta to pot making sure all cheese is melted.
7. Drop dumplings into pot and simmer until cooked through.
8. Add diced celery leaves.


Garnish with shredded cheese.
