1 chicken boiled
4 c. butter
¼ c. flour
2 c. chicken broth
8 oz sour cream
10 oz shredded monterrey jack cheese
¾ chopped onion
2 sliced jalapeno (optional)
12 soft corn tortillas

Directions:
Directions:
Melt butter in sauce pan over low heat
Slowly add flour, stirring constantly until smooth
Gradually add chicken broth
Cook over medium heat until thickens
Remove and stir in sour cream and jalapenos
Lightly baste bottom of pan with sour cream sauce
Blanche tortilla in vegetable oil until softened
Place stuffing of chicken, onion, and peppers in center of tortilla
Roll tortilla and place enchilada in basted pan
Top with sour cream mixture
Sprinkle cheese on top.
Bake at 350º F for approximately 15-20 min until cheese is melted
