¾ lb hot / mild bulk pork sausage
2⅔ c. all purpose flour
2 tbsp sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ c. shortening
1 package dry yeast
¼ c. warm water ( 105º to 115º )
1 c. buttermilk
½ c. melted butter

Cook sausage in a skillet until browned, stirring to crumble
Drain well, and set aside
Combine the next 5 ingredients, mixing well.
Cut in shortening with a pastry blender until mixture resembles coarse meal
Dissolve yeast in warm water; let stand 5 min
Add yeast mixture to buttermilk, stirring well; add to dry ingredi ents
Stir just until moistened
Knead in sausage
Turn dough out onto a lightly floured surface;knead lightly about 4 min
Roll dough to ½-inch thickness; cut with a 1¾-inch round cutter
Place biscuits on a an ungreased baking sheet
Brush tops with melted butter
Bake in a preheated 425º F oven for 10 min or until golden brown
Yields 3 dozen biscuits
