Corn Bread


Ingredients:

2 lbs of 80/20 Ground Beef
1 can each of:
refried beans,chili beans, pinto beans, ranch style beans - these can be spicy or mild versions of each
bean.
1 regular onion
2 medium cans of Hatch chopped green chili
1 can of Rotel - spicy or mild
½ cup of salsa - your brand choice
Garlic powder to taste
Onion powder to taste
New Mexico red ground chili powder to taste
Salt to taste
1 packet of taco seasoning

Top with shredded cheese and sour cream if desired.

Brown ground beef in a skillet and drain grease.
Add onions and saute with meat.
Add packet of taco seasoning.
Transfer all to large soup pot.
Add all cans of beans including the juice from each can.
Add cans of Rotel and chopped green chili.
Add salsa - if desired
Add all spices - Taste, Taste, Taste!!!
Let simmer until heated all the way through.

Chili is ready, now top with shredded cheese, Fritos, and sour cream - if desired

1 c. flour
tbsp baking powder
1 tsp salt
1/3 c. shortening
1 c. milk
1 egg

Sift dry ingredients
Cut in shortening till done blending
Beat milk and eggs together
Mix till just blended
Pour into well greased pan
Bake in hot oven "400o"
25 minutes or till done
For sweeter corn bread sifted one 1/4 cup sugar with dry ingredients
Use 1/4 cup of shorting

You can make it as spicy or mild as you want. Feel free to add other ingredients and make it your own, you can't go wrong with experimenting! This is the first recipe I made with my Mom and Nannie for this cookbook.
