1 Pint fresh Blueberries or substitute with
Peaches, bananas or apples
⅛ cup white sugar
⅛ cup brown sugar
2 T butter
¼ c water
2 tsp pure vanilla
2 cups of favorite pancake batter

Directions:
Directions:
Sauté to thicken 3/4 pint fresh (not frozen) blueberries with white sugar and brown sugar, 2 tablespoons butter, 1/4 cup water, 1/2 tsp vanilla. Medium heat until syrup like consistency.

Prepare favorite pancake batter, adding remaining 1/4 pint of fresh blueberries, 1/4 tsp vanilla.

Use a glass pie pan and coat with non stick spray. Pour the blueberry sauté into the pie pan. Pour pancake batter over the top of the blueberry sauté without mixing.

Place pie pan on top of a cookie sheet and cook in 350 degree oven for about 25-30 min or until batter is of pancake consistency.

Either serve warm with syrup right out of the pie pan or…. flip it out of the pan with a plate on top similar to preparation of an upside down cake for a pretty presentation. Dust with a touch of confectionery sugar.

Substitute blueberries with either peaches, bananas or apples for a nice few alternatives. Make all three for a brunch gathering! A great way to have pancakes without the fuss!!!

Yesterday, I was on my way to Brianna's engagement party, but got stranded in Detroit....I never made it because of the multitude of flight cancellations. Instead, I was re-routed home. Full of disappointment, I decided to 'Think Positive', Be Positive' and Be Inspired....I noticed anger in others, random people sweating the small stuff, and several really nice and kind people making the best of a hard day....One older man would miss his brother's wedding, An older couple missing a grand cruise to London after saving money a life time, a Vietnam vet going to see his daughter, a lovely woman who served in the Air Force where she met her husband and a man from Mexico heading home to Nebraska to see his wife and newborn baby after a long week of work. Despite these disappointments, they all simply endured the disappointments that come with that thing called life. After 12 hours of hanging out in the Detroit airport and observing the stressed attendants handle all of us with grace and compassion, I realized that attitude, positivity and kindness is a choice and the greater those attributes, the better we can endure tough situations and just maybe we become more aware of the charm in others...

So, because I captured a free Saturday morning, I was inspired to make good use of the blueberries that were the only fresh item in my fridge which was bare....! Enjoy and 'choose positivity'!
