6-8 Quail
Salt and Pepper
Flour
1/2 C. Butter
Milk

Directions:
Directions:
Salt and pepper the quail all over and roll in flour. Melt butter in very large skillet with a lid and brown quail over a medium heat.

Remove quail from the skillet and add 3 tablespoons or more flour, salt and pepper.

Brown flour lightly and slowly stir in enough milk to make a white gravy; add more salt and pepper, if needed.

Return the quail to the skillet and add in the gravy. Cover, and let simmer for 45 minutes. Serve gravy over rice or biscuits.
