2 lbs. beef round steak, 1'' thick
1/2 cup flour
3/4 teaspoon salt
1/4 teaspoon pepper
2 tbsp. vegetable shortening
1 1/2 cups water
1 medium onion chopped
1 (14 1/2-ounce) can tomatoes undrained

Directions:
Directions:
Trim fat and bones from steak. Combine flour, salt and pepper. Pound flour mixture into steak using a meat mallet or the edge of a sturdy plate. Heat shortening in a skillet until hot. Add steak and cook until browned on both sides. Add water, cover and cook over medium—low heat, about 1 hour. Add onion and tomatoes; continue cooking until meat is tender, about 1 hour more.
