4 eggs, beaten with 1/4 t. salt and pepper
1 c. half & half
8 oz. shredded cheddar
1 green pepper, diced
1 onion, diced
1 1/2 c. julienned ham
Butter
2 - 3 T. Parmesan cheese

Directions:
In a 10 - 12 inch skillet sauté diced onion for 2 - 3 minutes until soft. Remove to bowl. In same skillet sauté diced green pepper for two to three minutes. Remove to bowl. Add a little more butter and sauté the julienned ham until it starts to brown. Return vegetables to pan and sauté with ham for another minute or two. Add grated cheddar leaving out a couple of tablespoons for the topping. Spoon into buttered pie plate. Mix together egg mixture with half & half and pour over the frittata. Sprinkle on remainder grated cheddar and parmesan cheese. Bake in a preheated 350º oven for 30 minutes or until knife comes out clean. Serve with salad or soup.
