1. Fried Green Tomato recipe

4-6 Green Tomatoes, sliced into ¼ inch rings
Kosher Salt and Freshly Ground Black Pepper
¾ cup All-Purpose Flour
1 Tbs. Garlic Powder
4 Eggs, beaten
2 Tbs. Milk
1½ cups seasoned Panko Breadcrumbs
Pinch Cyan Pepper
Pinch Paprika

2. Roasted Tomato recipe

10 Tomatoes halved lendthwise
1 Red Onion, thinly sliced
1 Tbs. Garlic
Olive Oil
Sea Salt
Freshly Ground pepper

3. 1 box Spaghetti or Linguini cooked according to box

Mozzarella slices, Provolone slices, or Shaved Parmesan

Roasted Tomatoes:

Heat oven at 325º
1. Place tomatoes in baking dish, cut side up. Cover with garlic, onions, heavy salt and pepper. Roast for 2.5 hours. Let cool and remove any burnt onion. Transfer to blender with oregano and basil to taste and blend until slightly chunky.

Fried Green Tomatoes:

1. In a deep frying pan, add peanut oil and heat on high.

2. Mix flour and garlic in a shallow dish. Add beaten eggs in 2nd shallow dish. Add breadcrumbs, paprika and cayenne in 3rd shallow dish.

3. Dredge tomato slices in flour, then the eggs, then breadcrumbs. Add to pan a few at a time so they cook evenly, about 2-3 minutes. Drain on paper towels

Putting it all together

Place cooked pasta in large bowl, add roasted tomato sauce on top and place 2 fried green tomatoes on top of that. Top with Cheese slices or sprinkle with shaved Parmesan and a fresh basil leaf.
