2-3 tsp. Olive Oil
1 medium onion, finely chopped (about 1 cup)
1 cup finely chopped celery
1½ cups finely chopped carrots
2 tsp. dried thyme
½ tsp. dried sage
1½ tsp. ground turmeric
12 cups chicken stock
½ cup farro
2 cups cooked, diced chicken
4 cups finely chopped Italian kale
salt and ground black pepper to taste

1. Heat oil in large stock pot and add the onion, celery, and carrots, sauteing until softened. Add dried thyme, dried sage, and turmeric and saute 1-2 more minutes.

2. Add chicken stock and cook at a low simmer for 15 minutes. Add farro and continue to simmer for 30 minutes. While soup simmers, chop kale(removing the stems) and dice the chicken, add to soup. Let soup simmer on very low heat for 30-40 minutes more. Season with salt and black pepper to taste.
