1 sheet frozen Puff Pastry, thawed
2 tablespoons honey or agave necter
1/3 cup dried cherries or craisins, roughly chopped
1/4 cup chopped pecans, slivered almonds or your favorite nut
1 teaspoon chopped fresh rosemary
1 (16 oz.) Brie cheese round (about 6-inches in diameter)
1 large egg, beaten with 1 tablespoon water

Preheat the oven to 425°F. Line a baking sheet with parchment paper.

On lightly flowered surface, roll out puff pastry sheet.

Place nut, honey and rosemary mixture in center of pastry sheet and cover with the brie. Fold puff pastry around the cheese to cover completely and trim excess pieces to use for decoration later.

Lightly brush seams with egg mixture so they stay closed and flip over onto prepared baking sheet (nut mixture should now be on top under the puff pastry.

Brush the rest of the puff pastry top with egg mixture.

Decorate top of puff pastry using scraps if desired. Brush with egg mixture.

Bake for about 20-25 minutes, or until the pastry is golden brown. Let stand for 45 minutes, then serve with fruit and crackers.

Note: You can prepare this appetizer ahead of time up until the baking step; refrigerate until ready to cook.
