1 ½ tbsp. Chili powder
½ tsp. Garlic powder
½ tsp. Onion powder
½ tsp. Crushed red pepper flakes
½ tsp. Dried oregano
¾ tsp. Paprika
2 ¼ tsp. Ground cumin
1 tsp. Salt (I omit this)
1 ½ tsp. Black pepper
1 tsp. Canola oil
½ cup Chopped onion
2 cloves Garlic, minced
1 ½ lbs. Extra-lean ground beef (I use 96/4)
3 cups Unsalted beef stock
1 (28 oz.) can Crushed tomatoes
3 oz. Reduced fat cream cheese, cut into cubes (Neufchatel)
1 cup Frozen corn kernels (I use "fire roasted")
1 ½ cups Black beans, drained and rinsed

Optional (for topping): Avocado, cilantro, green onion, low-fat cheese, tortilla strips/chips

1. Combine the chili powder, garlic powder, onion powder, crushed red pepper, oregano, paprika, cumin, salt and pepper in a bowl and, stir to combine. Set aside.

2. Pour the canola oil into a soup pot or Dutch oven and bring to medium-high heat. Add the onions and stir to coat. Cook , stirring occasionally, until the onions are softened. Add the minced garlic and cook for an additional 30-60 seconds. Add the ground beef and stir together. Cook, breaking the meat up into small pieces, until the meat is cooked through. Add the spice mixture from step 1 and stir to coat the meat.

3. Add the broth and crushed tomatoes and increase the heat to bring to a boil. Once boiling, reduce the heat to low and simmer, covered, for 20 minutes.

4. Uncover the pot and add the cream cheese. While still simmering, add the cream cheese, whisking until the cheese is dissolved. Add the corn and black beans, stirring to mix. Re-cover pot and simmer for an additional 10 minutes.

This Beef Taco Soup is a filling, flavorful and super satisfying one-pot meal. Rich and tasty with a little kick, this soup is packed with lean ground beef, sweet corn and hearty black beans. This soup is fantastic on its own, but you can also easily customize it with your favorite toppings like avocado, cilantro, shredded cheese, sour cream, green onions or crispy tortilla strips.
