Pizza Sauce:
1 45 oz jar tomato sauce
1 lg (or 2 14.5 oz cans) Muir Glen crushed or diced tomatoes
1 can pureed tomatoes
14.5 oz can tomato sauce (optional)
1-2 onions, diced
1/2 sweet red pepper, chopped
1/2 sweet green pepper, chopped
1-2 cloves of garlic, minced
1 tbsp dried oregano
1 tbsp dried basil
2 tbsp olive oil
1 tbsp sugar

Toppings:
1 lb sweet Italian sausage (try to find it made fresh), browned
1 pkg shredded low-fat mozzarella cheese
1 pkg other shredded cheese like cheddar, swiss, parmesan (keeps mozzarella from getting stringy)
1 pkg bacon, cut into 1-2 inch pieces, cooked till 1/2 done

Preheat oven to 400º F. If using a pizza stone, preheat that in the oven.
Pizza Sauce:
Combine all the sauce ingredients in a large saucepan and simmer on low heat for 1 or 2 hours or until sauce is the right consistency for pizza sauce. This same sauce can also be used for spaghetti.

Assemble Pizza:
Spread cooled sauce on pizza crust (see recipe for homemade crust in bread section)
Sprinkle sausage and a mixture of cheeses (mostly mozzarella) on top
Pat down the cheese and then add bacon pieces.

Place the pizza on the pizza stonemand bake for 20 minutes. Check and cook more, if needed.
