4 large or 8 medium potatoes
4 Tbsp. butter or margarine



Toppings:
Cheese:
4-6 Tbsp. grated aged cheese
2-3 Tsp. parmesan cheese


Onion:
2-4 Tbsp. finely chopped onion
1-2 Tbsp. chopped green onion or chives


Herbs:
4-6 Tsp. mixed dried herbs, such as thyme, marjoram, dill weed or basil leaves OR
3-4 Tbsp. chopped fresh herbs, such as parsley, dill, tarragon, chervil or thyme


Spices:
1-2 Tsp. paprika, curry powder, anise seed, cumin, fennel

Directions:
Choose potatoes that are even in size for better baking. Peel them. Place potatoes on end lengthwise. Cut a thin slice off the bottom of each potato. Cut potatoes into thin slices but not all the way through. Use a ruler or a wooden spoon handle to help keep the knife from cutting all the way through. Put potatoes on a baking dish. Fan them slightly. Add topping of your choice. Dot with butter. Microwave at HIGH power 16-18 minutes or until potatoes are fork tender. Serve immediately. (Good served with meat, fish or chicken).
