2 1/2 c. flour
1 t. salt
2 t. baking soda
1/2 c. butter, softened
1/2 c. shortening
1 1/2 c. Jif peanut butter
1 1/2 c. brown sugar
1/2 c. white sugar
2 eggs
1 T. vanilla

Directions:
Directions:
Combine the dry ingredients in a bowl. Cream together the butter, shortening, and peanut butter in a large mixing bowl. Add the sugars and mix until light and fluffy. Stir in the eggs and vanilla until everything is combined.
Mix the dry ingredients into the peanut butter mixture, one-third at a time. The dough will be stiff, but not crumbly, and should be easy to form into cookies.
Roll the dough into balls and flatten very slightly, using a fork to criss-cross the tops. Bake at 350˚F for 10-12 minutes or until the center of the cookies are just set. Remove from oven and let sit for 2 minutes then move them over to a wire cooling rack.
