rosemary
garlic
salt
pepper
white vinegar

1. Cut and peel potatoes in quarters and equal size, roughly 2 inch cubes
2. Place potatoes in cold salted water in pot
3. Bring pot to boil
4. Parboil potatoes for ~8 minutes (should be ~soft but firm enough to hold shape)
5. Drain potatoes in colander, lightly toss to fluff edges, let cool
6. Preheat oven to 375 degrees F
7. Place potatoes in single layer in pan with olive oil
8. Season potatoes with salt and pepper to taste, toss in olive oil
9. Roast potatoes for 20 minutes
10. While potatoes are roasting, rough chop garlic and rosemary
11. Toss garlic and rosemary in olive oil and dash of vinegar
12. After 20 minutes, remove potatoes from oven
13. Using a potato masher (or something flat...), lightly smash potatoes to increase surface area touching pan - should only slightly smash them
14. Spread garlic and rosemary mixture over potatoes evenly, drizzle with olive oil as necessary
15. Continue roasting potatoes for 15-20 minutes, or until golden brown
16. Remove from oven, serve hot!
