Ingredients: 1 lb. Ground Beef 1 lb. Macaroni Noodles 1 large box of Velveeta Cheese (I prefer mexi style!) 2 tsp. chili powder 1 lg can of Hatches Green Chiles 1 c. seared frozen corn (optional) 1 tbsp. cumin powder 1/2 yellow onion diced 1 jalapeno (optional) 1/2 cup Salsa Dash of Milk

Directions:1. Boil water for pasta. Salt the water when it comes to a rapid boil and then pour in pasta and cook 2 mins shy of al dente. Drain and return to pot. 2. Brown ground beef and drain. 3. To the beef skillet add EVOO and add the diced onions - cook until they are soft. Remember to cook onions slow and steady, stirring often. Salt onion. To the onions add green chiles, jalapeno and the cumin and chile spices. Add ground beef and mix thoroughly. When everything is heated through spoon beef mixture to the drained pasta in the pasta pot. 4. In the skillet add another tbs of EVOO skillet, on a high temperature sear your cup of frozen corn then add to pasta pot. 5. Dice Velveeta and put into pot with your dash of milk. Stir in enough milk and salsa to get mixture to mac and cheese consistency. Heat mixture through. Spice with Salt and Pepper to taste. If you want it even hotter add more jalapeno or even red pepper flakes. You can play with this recipe to make it your own! |
