12 oz grilled flank steak, thinly sliced
8 oz spaghetti
1 tsp dark sesame oil
4 cloves garlic, minced
1 tsp ginger
12 oz bag fresh mixed veggies – shredded broccoli, carrots, cabbage, snap peas
¼ cp peanut sauce
3 Tbls reduced sodium soy sauce
1 Tbls brown sugar
1 tsp red pepper flakes
Chopped peanuts
Chopped cilantro

Bring a large pot of lightly salted water to a boil. While it’s getting hot stir the soy sauce, brown sugar and red pepper flakes together in a sm bowl. Separate any large pieces of broccoli from the bag of veggies and chop them up a bit smaller. Put the sesame oil in your wok or skillet and turn the heat on as the water nears boiling.

Put the spaghetti in the boiling water and get the garlic and ginger in the hot sesame oil over med-high heat. Cook and stir about 30 seconds. Add mixed veggies to the skillet; cook and stir until slightly tender, about 3 minutes. Lower the heat and pour the soy sauce mixture in, stir it well. Add the flank steak, cook and stir until another 3 min. Lower the heat to simmer and stir occasionally until the spaghetti is done.

Drain the spaghetti when it’s tender and put it back in the pan. Stir in the peanut sauce till all the pasta is well coated. Add this to the meat and vegetables. Top with chopped peanuts and fresh cilantro.

I used leftover steak from fajitas and it was delicious. The steak had been marinated in lime juice, oil, cilantro, jalapeno, garlic and cumin. Mexican and Asian foods have similar flavors.
