3 cups coarsely grated zucchini 1/2 cup flour 1 egg 1 Tsp. baking powder salt and pepper
Grate zucchini. Add the rest of the ingredients to the zucchini and mix thouroughly. In a skillet, heat olive oil and drop the mixture by tablespoonfuls into hot oil. Spread with spatula and cook until fritters brown on both sides.
