4 lbs. potatoes
6 cups flour

Directions:
Directions:
Cook potatoes until tender. While hot, remove skin. Put potatoes through ricer (you will need to be careful, as potatoes are hot). Add flour to potatoes and blend to form dough. Divide dough into 4 equal pieces. Working with one piece, roll into long strips the size of a thick finger. Cut strip into 1" pieces. Roll each piece toward you to make indentation (but not so much that you lose shape). Repeat procedure with 3 other pieces. Place gnocchi on cookie sheet and freeze. Once frozen, gnocchi can be placed into plastic bags and put back in freeezer. Cook in batches, in salted boiling water. Serve with red sauce and grated cheese.
