1 lb. fresh spinach fettuccine
1 lb. spinach, cooked, with liquid squeezed out (frozen okay)
1/2 lb. feta cheese, crumbled
1/2 lb. cherry tomatoes, cut in half
2 Tbsp. chopped fresh basil



Vinaigrette Ingredients

1/4 cup balsamic vinegar (3 Tbsp, used)
1 Tsp. dijon mustard
1/2 cup olive oil
1 clove garlic, chopped

Directions:
Directions:
Cook pasta. Drain and cool. Add 1 tsp. olive oil and mix. Set aside. Toss cherry tomatoes with 1 tsp olive oil and basil. Add tomato mixture to pasta and spinach. Pour half of Vinaigrette over and mix. Add crumbled feta cheese. Add rest of dressing.
