Whole pork tenderloin
Flour
Egg
Milk
Bread or cracker crumbs

Directions:
Directions:
Slice tenderloin in 1 in pieces. Flatten with meat tenderizer. Beat egg(s) with a fork and thin with milk. Dip each piece of meat in flour, then egg and milk mixture, then bread crumbs. Brown in oil, cover and cook until done, five or ten minutes. This can be made ahead and kept warm until ready to serve.

Note: The same procedure can be used for fish filets. Do not overcook. Filets are cooked through in just a few minutes, depending on thickness.
