1 Tbsp. butter or margarine
3/4 c. chopped yellow onion
1 c. beer
1 lb (16 ounces) Velveeta©, cut into 1/2 inch cubes
1 can (10 ounce) Ro*tel© Original diced tomatoes & green Chilies, drained
soft pretzel bites, Frito's©, or fresh veggies

Melt butter in a large skillet over medium high heat.
Add onion and saute 5-6 minutes or until lightly browned, stirring frequently.
Add beer, reduce heat to medium and simmer 2-3 minutes
Combine Velveeta©, drained Ro*tel©, and onion mixture in a microwave safe casserole dish. Cover and microwave on high 3-5 minutes or just until Velveeta melts, stirring after each minute.
Stir until mixture is well blended.
Serve with soft pretzel bites or other dippers of your choice.
