1 of each color bell pepper: red, orange, yellow, green
1 onion
1 can corn
1 can black beans
1 can pinto beans

1/2 cup olive oil
1/2 cup Apple cider vinegar
1/4 cup sugar

Directions:
Directions:
Drain/rinse corn and beans and put in a BIG bowl. Dice up onions and peppers and add to bean/corn mix. Boil vinegar, oil, and sugar, stirring occasionally until sugar dissolves. Let cool and pour over everything and mix up good. Should keep up to two weeks in the fridge.

This is a recipe I got from a woman I met online in the craziest of ways. Her husband was dying of cancer and she was closing her hair business and selling all the color on eBay. I missed the sale, -'d asked her to repost it so I could buy it, and she blew up at me, having misunderstood my request. I reached out to her to clarify, and we became good friends. This was posted on her blog she was keeping at the time, and it is a yummy reminder to me of how I met a special new friend.
