1 bag hash browns ( I prefer the cubed ones with peppers and onions)
1/4 small red onion, minced
1 pkg bacon
1 large can chicken stock
2 tsp minced garlic
1 pkg ranch seasoning mix
1 can brocolli and cheese soup
salt/pepper to taste

Directions:
Directions:
Cook bacon, garlic, and onions in a skillet until well done. Allow to cool and chop on a cutting board.

In a large pot, add cooked ingredients and chicken stock. Bring to a boil. Add hash browns. Add remaining ingredients. Allow to simmer, stirring occasionally.

Serve when potatoes are softened.

This is what I would call loaded baked potato soup. I never make it exactly the same way. Sometimes I throw in a stick of butter or chopped up broccoli and some carrots. This is a great base for you to add anything you might like. The reason I use hash browns is because I hate to peel potatoes. This saves me time and frustration! You can use the slivered hash browns too, but it does tend to become a little mushier and has less texture. It's really a preference!
