6-7 Ripe plum tomatoes
2 cloves of garlic, minced
1 Tbsp olive oil
1 Tsp balsamic vinegar
6-8 fresh basil leaves
salt and pepper
1 Baguette french bread
1/4 cup olive oil

Directions:
Directions:
1. Prepare the tomatoes first. Parboil the tomatoes for one minute in boiling water that has just been removed from the burner.

2. Using a sharp small knife, remove the skins from the tomatoes (if the tomatoes are too hot, you can protect your finger tips by rubbing them with ice cube between tomatoes).

3. Once the tomatoes are peeled, cut them in half or quarters and remove the seeds and juice from the center. also cut out and discard the stem area.

Turn on oven to 450ºF

4. chop up tomatoes finely. Put tomatoes, garlic, 1 tbsp olive oil, vinegar in a bowl and mix. Add the chopped basil. add salt and pepper to taste.

5. Slice baguette on a diagonal about 1/2 inch thick. Coat one side of each slice with olive oil using a pastry brush. Place on cooking sheet, olive oil side down. Toast for 5-6 mins (until golden).

6. Lay bread olive oil side up on a serving dish. Spoon over some tomato topping on each slice or place in bowl for people to serve themselves.

Faster Option: Don't boil or peel tomatoes. I also like to add a 1/4 of a red onion chopped very finely. Instead of heating the oven just put bread under broiler for 30 seconds (watch closely that it doesn't burn
