4 pound leg of lamb
3 cloves of garlic
Juice of 1 lemon
1 tablespoon salt
1 teaspoon pepper
1 tablespoons butter
1 cup hot water
Oregano (optional)

Directions:
Directions:
Peel and cut garlic into halves. Make slits in lamb and insert garlic, rub lamb with lemon juice. Sprinkle with salt and pepper, oregano (if desired). Place on a rack in a baking pan. Spread with butter, put cup of hot water in pan. Bake at 350 for 2 1/2 hours or until meat is tender. Turn meat over once, add water from time to time.
