Prime rib roast
4-5 fresh garlic cloves
Salt & pepper
Worcestershire sauce
Splash of red wine

Directions:
Take out the roast at least two hours prior to roasting so that the roast is room temperature. Preheat oven to 550 degrees.

Place roast on a metal roasting rack with drip pan.

Season the roast with a sea salt and black pepper rub.

Coat the roast with Worcestershire sauce. Next, cut about 4-5 cloves of garlic into slivers, then cut small slits in the top of the roast (bone side down) and insert the slivers into the slits then cover the bottom of the drip pan with water (water not touching roast) put roast on rack bones side down and roast for 7-8 minutes per pound depending on oven.

When roasting time is over shut off oven but do not open the oven door for two hours. After two hours check roast for internal temp 140-150 degrees. If it needs more roasting time try 325 degrees for 1/2 hr. Or if done you may need to heat the roast try 15 minutes. Then let roast rest for 10 minutes before slicing. For Au Jus use the drippings in the drip pan put in sauce pan with a little water and red wine, make sure to scrape the drip pan to get all of the crackles bring to boil then reduce to low and simmer for 5 minutes.
