125ml Oil (I use olive oil)
1 cup white sugar
2 Eggs
2 Cups Self Raising Flour
1 tsp Bicarbonate Soda
1/2 tsp Baking Powder
3 Tbsp Milk
1/2 tsp vanilla essence (or more if you like)
3 Ripe Bananas (softer the better)
1/2 cup Chocolate chips (optional)
1/2 cup Chopped walnuts (optional)

Icing (Optional)
Butter
Icing Sugar
Lemon juice

Directions:
Directions:
1. Preheat oven to 170ºC (340ºF). Grease bread tin and line with grease paper

3. Beat Oil, Sugar, Egg and mashed bananas

4. Add all other ingredients (Including chocolate chips and walnuts if using)

5. Mix and pour into loaf tin

6. Bake for 1-1.5 hours (it will be ready when a tooth pick or knife comes out clean when stabbed through middle of cake)

Lemon Butter icing is great on top. Wait until the cake cools before spreading icing thickly on top. Just mix a big dob of butter with lemon juice and as much icing sugar as it takes to taste delicious

This cake comes out moist and perfect every time. Perfect way to use up bananas that are starting to go bad. And it freezes great if you want to make it and save it for another time.
