2 tbsp olive oil
450g chorizo sausage, skin removed and cut into bite size pieces.
115g diced pancetta or smoked bacon.
2 red onions finely chopped.
1 large carrot finely chopped.
1 long mild red chilli finely chopped.
1/2 tsp dried chilli flakes.
1 tsp dried oregano.
2 tbsp tomato purée.
2X400g tins of chopped tomatoes.
2X400g tins cannelinni beans, drained and rinsed.
400g cherry tomatoes.
210 mls hot chicken stock.
Salt and black pepper.
2 tbsp chopped parsley.

1. Heat the oil in a large frying pan and cook Chorizo chunks over a medium heat for 5 mins stirring to release the fat. Remove the Chorizo and put into either a casserole dish or a slow cooker.

2. Cook the pancetta or bacon in the pan you fried the Chorizo in , add the onion, carrots and cook for about 8 mins on a medium heat till they are soft.

3. Add the chilli, paprika, oregano and tomato purée and stir to combine all the ingredients.

4. Add tinned tomatoes, tinned beans, cherry tomatoes and chicken stock and heat stirring all the time.

5. Add all ingredients to Chorizo in the slow cooker/ casserole dish.

If cooking in slow cooker cook for 8 hours on low.

If cooking in the oven cover dish and cook for 1.5 hours at 180.C

Just before serving season to taste and sprinkle on parsley.

Serve with crusty bread or garlic bread.

Hi this is a recipe that I had as a supper dish and found it tasty. It can be cooked in a slow cooker or in the oven. It is served with crusty bread. This amount serves 4 so can be adjusted depending on how many you are cooking for or how hungry you are.
