Sweet Potatoes (3 - 5 lbs depending on the size of your group)
12 T butter (1 stick is for topping, 1/2 stick for mashing sweet potatoes)
Half and Half (Milk will do)
Paprika (optional)
Salt to taste
1 C brown sugar
1 C chopped pecans

The Original Recipe from Out of League calls for 3 sweet potatoes and a small greased casserole. I've never made the recipe without using about 10!

Bake sweet potatoes on greased cookie sheet at 350º until soft when fork inserted.
Scoop out potatoes into large bowl
Mash with half and half and 4 T melted butter
Season to taste with salt and paprika
Put potato mixture in greased 9 x 13 pan

In frying pan, melt one stick of butter and brown sugar JUST until melted (If you cook too long, topping will harden). Pour over sweet potatoes. Top with pecans. Bake until hot and bubbly, about 30 minutes.

Can be made ahead and frozen. Thaw before baking.
