4 C. Cauliflower, florets
2 cans Sliced Carrots (or 2 medium carrots, peeled and sliced - about 1 cup)
1 can String Beans (or 1 1/2 C. fresh green beans, cut into 1-inch pieces)
1 Green Pepper, sliced
1 onion, thinly sliced
Marinade:
1 can Tomato Soup
1 tsp. Prepared Mustard
1 tsp Worcestershire Sauce
1 C. Sugar
3/4 C. Cider Vinegar
Salt and Pepper to taste
1/2 C. Oil

Directions:
Directions:
In a small bowl whisk together the marinade ingredients, add in the oil separately in a stream, whisking the dressing until it is emulsified.

If using raw vegetables:
In a steamer set over boiling water steam the raw cauliflower florets, carrots and string beans for 2-3 minutes, or until they are crisp-tender. Transfer the vegetables to a colander, and stop the cooking by immersing in iced water.

In a bowl combine the steamed (drained and dried) vegetables (or canned vegetables), green pepper and onion. Toss the mixture with the marinade. Cover and chill for at least 4 hours or overnight.

This is very good, but I never used canned vegetables - always fresh.
