4 Qts. Cucumbers, thinly sliced
6 medium Onions, thinly sliced
1 Green Pepper, thinly sliced, optional
1 Sweet Pepper, thinly sliced, optional
3 Cloves Garlic
1/3 C. Salt
Ice
3 C. White Vinegar
5 C. Sugar
1 1/2 tsp. Turmeric
1 1/2 Tsp. Celery Seed
2 Tbsp. Mustard Seed

Directions:
Directions:
In a large bowl, mix together cucumbers, onions, peppers, garlic and salt. Let stand approximately 3 hours covered with the ice.

Rinse and drain liquid thoroughly from the cucumber mixture.

In a large saucepan, mix the vinegar, sugar, turmeric, celery seed and mustard seed. Add the drained cucumbers.

Place pot on medium low heat and bring almost to a boil, but DO NOT ALLOW TO BOIL. Remove from heat and pack in hot sterile jars and place in a 10 minutes in a hot water bath.

Easy way to sterilize jars:
Wash the jars in the dishwasher and then simply leave them there until ready to fill. Keeping the door to the dishwasher closed keeps in the steam and heat. Remove the jars a couple at a time as needed.
